A few years ago I started a site mostly for information not really was selling much of anything but because I enjoy the subject. I still did Keyword research and picked my main keyword phrase which was getting about 1000 searches a month. I also got it because the research tools said it was easy to rank for.

In about 4 months I was on position one in google and stayed there for almost a year.

Now 3 years later that same keyword phrase is only getting 260 searched a month but is now listed as very difficult to rank for.

Why would a keyword that get very little searched be listed as very difficult to rank for when it wasn't years ago.

I would think if it went from 1000 searches a month to 20,000 search a month it would make sense that it would become difficult but not in the other direction. Any thoughts.

Because you upped the difficulty level. Because you and some other people went for the keyword.

Why did people go for a keyword that has fewer searches than it did a while back?

They might not know that. They might know that but think the keyword was worth going after. They might all started at the same time (so they all saw: easy keyword) and, by the time they were done, because there were many, it was not an easy keyword anymore.

Or, it's still an easy keyword and the software you're using is making a mistake.

Or, you're looking at difficulty for adwords... and, then, the reasons are:
a bunch of idiots started a bidding war or
a bunch of people figured low search number but high conversion makes it worth their while.
