I just means that your website is higher or lower in the search returns. It can be because of Google, changes in your website, or changes that your competitors make in their websites, or a whole load of other things happening, including nothing happening at all.

One might expect that if you chart your SERP position over time that the graph would be smooth. That's almost never the case. It will be mostly smooth day by day but there will be big jumps up and down spaced out sometimes weeks apart - often by hundreds of positions.

That's the Google dance.
