301 Redirects and Updating Content

We have an existing content rich site roughly 200k pv/ mo and are planning to move to a new domain URL. The new site will be a complete redesign and will be at the new URL, due to launch in about 10 weeks).
Once the new WP site is built e are planning to do a a 301 for the old main url to the new one i.e 12345.com to abcd.com.
In addition we are planning to redirect our heaviest trafficked pages to similar pages on the new site.
Question is... we would also like to update these pages to get even better results/ranking. Should we update now (before the 301 redirect) or wait till the new site is up and update them on the new site.
I'm wondering if updating them on the new site will negatively impact SEO etc - will google consider this different content.
Not sure if I am explaining this clearly - so any help is appreciated especially around how to mitigate negative outcomes with 301 redirects and page updates.
