Why does my permalink structure keep changing?

Hey everyone.
I'm working on building a site right now and I've got a complex navigation system set up. This navigation system requires me to put posts in mutliple categories. Don't worry, I've got category pages set up to noindex...so no duplicate content issues.
The problem I'm having is...
I want to maintain a certain permalink structure with my posts. I make the post, choosing only 1 category...the 1 I want to show up in the permalink structure. I publish a post...go back and edit the post to add pertinent categories...wordpress is changing around the permalink structure of the blog!!!
It didn't do this for the 4 first posts I added to the site. For those posts, I selected 1 category...published the post...and that is the category that showed up in the permalink. Then I went back and edited the post to add the other categories...and it worked fine. My permalink stayed constant and unchanged. Now all of the sudden...any time I edit my post to add a category...its changing the permalink structure to reflect the new categories.
OH i am using a permalink structure that shows category / post name. And up until now it was working fine. It stuck with the original categories I ticked when publishing the article...never changed...even if I added more categories.
So I guess there are two questions...
Why does wordpress keep changing my permalink structure after a post has been published with it one way? And how can I stop wordpress for editing the permalink structure of ALREADY PUBLISHED posts.
