SERP questions from a newbie

I'm newer to this so I have a few questions-
I registered an exact (micro niche) keyword domain 6 days ago. Unique targeted content, no ads, seo optimized, nothing spammy, only a few couple local searches a month. It is not a highly competitive keyword at all and the results are low quality. It was indexed within 24 hours but didn't rank for my keyword until a few days later (normal?)
It debuted at #2 on the first page, and was briefly bumped up to the #1 position. I know this is due to the "new site boost". Today a shopping website with PR5 that had previously not shown up at all took over the #1 position. It's relevant in the general sense but doesn't actually use my keyword.
My site is now rank #2, but it is all the way back on page 3 for a friend. Huge difference. What is that about?
Anyway, should I just leave it alone while it settles down? I'm curious how typical this behavior is and if this happens to all new sites or it is random etc. This was very much a test site to get a feel for things.
