New Site Google Dance?

I am pretty new to the SEO business. I have 5 sites up and running now, one is doing good (IMO), its been indexed and moving its way up the serps over the last month. I am on page 2 for my URL keyword, and number one for a lot of the article topics I have written.
My new site is 11 days old, and is bouncing all over the google search page. Yesterday I was on the top of page 2, now I am on page 13 and that page that is ranked is for a low keyword video landing page. It is driving me nuts because I had a nice traffic increase while on page 2 and now my traffic fizzled out. It can get discouraging, I assume it it part of the game?
On average, how often does Google re-index pages? I am thinking it will help me get bumped up near the top again because I keep building back links and adding new content.
