"Quotes" Confusion - Do You Know The Answer?

Okay,
I understand the importance of putting quote marks around your search term in the Google search engine to assess the number of sites that are competing with you on that particular phrase.
But here is where I'm getting lost.... I have my site ranking #2 in Google for one of my search terms when I use quote marks around it.
However, when I search in Google with the same search term WITHOUT the quotes (the way most people I know search for things in Google), my site is NOWHERE to be found. (I stopped looking after the first ten pages).
It seems the whole "put quotes around your search term" thing is a bit misleading because folks just don't search that way.
So, can someone explain why my site shows up #2 in Google for my term if I put quotes around it, yet doesn't show up at all without the quotes (the way it matters) ?
