Individual affiliate program NEED HELP!

Hey warrior fellows, I need some help in a specific case.
Short story, please apologize, I'm not a native speaker =)
6 Months ago I built and ranked one site which provides general informations about a specfic test for a job (Pure Adsense at that point and still is). Theres a huge market around it, which provide preparation seminars to it for money.
Since Im on spot #1 on google I emailed one of the provider if they're interested in an affiliate program. He agreed and we'll have a skype conversation the next days about it.Preparation courses are from 600€ to 1700€
My questions:
- How does this work? Im using clickbank and some other affiliate sites, but how can I track clicks on these courses on my site. And more important how can I see, if there was a sale for me? Is there some plugin etc. ?
- how much would you demand, how much is normal? 10-20%?
