WP Categories and Site Siloing Question

WP Categories best practices
I'm using the thesis framework, and Yoast SEO plugin exclusively
Am wanting to practice site siloing.
Am thinking the best way to do that is by restructuring wp /categories
have fooled with and researched much... my question is:
What is the best practice?
for example, with Tags and Thesis I can get a page with the last 5 posts using that tag and display an except for each, example here:
Local Google Advertising
am not sure I want that with domain dot com /category/-some-slug-here/
Which leads to this question:
domain dot com / category should result in...what?
the last post on that topic/ category ?
There is also the issue of Yoast recommending to strip the /category/ from the base url.
OK fine.. well then, which post IS going to display if there are 12 posts in said category?
