Ive noticed a lot of authority sites use excerpts on the home/category main pages.

Has anyone done any kind of split testing to measure if using them helps or not?

It has been working for me. A page with a brief summary on the top and then list of items tends to rank better than similar page with no summary.

Search Engines love Content. It helps me a lot. You also give it a try.

It's an effective method of convincing Google you're not using duplciate content, that's for sure...

A page with single posts (i.e. with excerpts) will be easier for Google to index and should therefore be more effective for SEO - it's also easier for readers!

Using excerpts is a great way to customize the contents that you want to show up in search results.
