I manage a lot of website and finally forgot to pay one of my hosting bills. My rangings drop because the website was down for a day, but will it take a while for them to come back up?

They often come back, but it can take days, weeks, or even months.

They should come back in about a week.

I had hosting with someone who did some kind of server change and for whatever reason after the change I was getting an error from GWT about them not being able to crawl my site because of DNS errors. After about two weeks(trying to figure out the problem), and losing money and my ranks I switch the site over to a different host and after a couple of days I was back on top and earning again.

Down for a day (unless you have tons of traffic) is not a that big deal. Just pay the bill it your site should be back in position in couple of days. Also look at the GWT about how many and what kind of errors they had traced.
