How to create summary posts from RSS?

Hoping somebody knows how to do this.

I'm using WP-o-Matic to pull posts from RSS feeds to populate a WP blog. I'd like to be able to have those posts only display an excerpt of the full post - maybe one or two paragraphs - with a link to the full post on the original site.

Any ideas?
