Need help/instructions to change text on a PSD Header using Gimp. I'm a novice when it comes to Gimp so any help would be appreciated.

Could you be a little more specific about what you are trying to do.

Never used Gimp, but a PSD file can have layers, unlike a JPG or GIF for example. Assuming the file you need to change does have layers, and you can see them in Gimp, select the layer with the text on it, choose your text tool, select the text & go. That's the way it works in PS, anyway. I have to assume it's going to be more or less the same in other applications.

It IS possible to create a PSD file with only one layer, in which case you would not be able to easily edit much of anything in it, especially text.
