    In your style.css look for the style for the links. It should be something like a:link or similar. replace the #XXXXXX; on color: #XXXXXX; with the HEX code of the color you want.

    To change the color of the links when mouse in over, do the same in the tag a:hover,or simmilar,

    The process is as Wechito has described for links, but I think your question related to the font (text).

    In this case the selector you want is simply 'color'.

    The problem is that there are often different styles of font across a site - for example the font colour in the footer may be white while across the rest of the site it's black.

    Therefore you need to find the correct selector and the easiest way to do that is with Firebug (a Firefox addon).
