Fake ads for jobs/creative writing contests
Job posting sites like craigslist and what not have a huge wealth of people looking to prove their writing talents. You can get people to submit all kinds of written content with enough ads up.
Forums (ripping "guides" peoples rants/opinions)
Look how much stuff gets written and posted up in forums each day...none of it copywritten. I have ripped huge guides posted by random people, turned them into helpful blogs. Couple of these blogs are now PR1 so, hey, theres a backlink too.
Scanning books/magazines/handouts/junk mail
Again check to see if the material is copywritten....you would be surprised how much stuff ISN'T. (I do this for clients a lot) not all printed material is online of course so there is a lot of untapped content in print.
Picture/video editing
Making pictures and video "unique" is not hard. combing photos is one trick and shortening videos is another.
Live speakers
All these workshops with speakers that are held in hotels and what not are a great source of content as well. Just be ready to transcribe the audio to text manually because I have yet to find a good audio (recorded audio not live) to text program.
