Everything offline has a value, which is usually far more easily gauged than a digital product. The fun begins when the two collide and you have an offline offering for an online product, be it a site, a vid, rep work, FB or Titter account work, or any of a long list of things.

Having your information together when going to get a client is a great idea.
One method I use is to have a list of sites and information on comparable sites. If I am going to hit auto dealerships I get the info on the other sites in the area, how they promote, which company they go through, and about how much they pay. Then show my prices and work. I've even charged MORE for a service than the local competitor. I had my stuff together, and a week or two before the local guy went in a bungled it all up. Info graphics work as well offline, if not better, than they do online.

Just being wired tight, looking presentable, and being relaxed can get you clients offline quickly and easily.
