CILANTRO LIME RICE RECIPE

INGREDIENTS
1 1/2 cups Brown Rice
Small bunch Cilantro - chopped (remove upper 1/3 or so of stalk)
1 bunch Green Onions - chopped
1 Poblano or Anaheim pepper - chopped
1 small Lime
2 Tbsp Olive Oil
Sea Salt
INSTRUCTIONS
Cook brown rice per instructions
In frying pan add olive oil and turn stove top to medium low heat
Add in brown rice, cilantro, green onion and poblano/anaheim pepper
Zest the lime and add to the rice and cut the lime in half and add in the lime juice
Add Sea Salt to taste
Cook until peppers are just tender stirring occasionally and serve
