You can change this in your PayPal account profile page. It's under the "Hosted Payment Settings" section, called "Custom Page Styles". I usually add a logo to that page instead of the text.

Yes, that will work as long as your customers are willing to pay via wire transfer or ACH. Some banks charge a fee for this, especially if it is from overseas. However the fee should be much less...

I actually prefer SendGrid for a few reasons. First it's hard to get good customer support from Amazon unless you pay for it. You can use their free forums but it takes a while to get support....

I wouldn't recommend that. It's difficult to run your own mail server properly and monitor bounce backs, spam reports, blacklists, IP blocks, etc.
